You probably already know that I’m a huge fan of recipe boxes. Being gluten and dairy-free, I struggle to come up with new recipes and what’s more, it’s a bit of a faff when I am the only one with dietary restrictions in my household. Recipe boxes make it so much easier as everything is delivered in its exact serving sizes!
There are a few boxes out there that offer gluten-free food, but Gousto is the only one I’ve seen so far that also promises to be suitable for coeliacs too. I was really pleased when I saw such a variety of gluten-free options on Gousto’s site. Usually there are just one or two gluten-free options; so this made such a nice change! I was really spoilt for choice! I decided to opt for their four meals for more people box. That way I got to choose a variety of different meals; but I had plenty of leftovers for lunches! It was basically the equivalent of my lunch and dinner for a week-so when you think about it, the price is very reasonable. I am also dairy-free but most of the dishes didn’t use any dairy. Those which did, I could see the ingredients list laid out clearly and therefore, it was easy for me to get the necessary substitution in advance. In this case, I just bought a tub of goat’s yoghurt and used that for all meals needed.I’ve since learnt that Gousto offer dairy-free boxes too; which I didn’t realise at the time.

How to get gluten and dairy free food for free.
The Meals
Monday’s meal was the chicken and hummus bowl (how amazing does that sound right?) I devoured this so quickly that I didn’t manage to get a picture but it was delicious! I’ve always wanted to make my own hummus-so I’ve kept the recipe card for next time. The chicken was marinated in paprika and other spices. It was really incredibly simple; and reminded me how easily I could create these meals for myself. It came with sweet potato wedges and was probably the most straightforward of all the dishes we made so it eased me in gently.
Tuesday’s meal was the best meal of the lot and to be honest, one of the best gluten-free, dairy-free meals I’ve ever eaten in my life! Smoked Mackerel Risotto!

I’ve always got some risotto rice in my cupboard but I’m never sure what to do with it! This recipe was super creamy and comforting; despite me only using 2 tablespoons of goat’s yoghurt in my serving to replace the original yoghurt provided (my husband used this in his half). I’ve never thought of cooking mackrel risotto before- I tend to just grill it in the oven and struggle to flavour it. However, combined with the creamy richness of the risotto (from the stock and cooking wine) and the zesty lemon, it was perfect!
I ate about three bowls of this for dinner that day and can honestly say it was the yummiest meal I’ve cooked in ages.
Wednesday came around and it was coronation chicken time.

How amazing does this look? I am a massive turmeric fan so this dish was right up my street. I had feared it might be too spicy but it was just perfect-a nice kick to it with a dollop of yoghurt to cool things down.
Finally, I decided to order a vegan recipe just to see how it compared. I’ve blogged a few times about trying to increase my vegan recipes on the blog so this seemed perfectly timed.

This is something I’d have never made in a million years- I guess that’s the beauty of recipe boxes! It required two different dishes: firstly spicing and baking the cauliflower in the oven (which I’d never think of doing but was yum) and then cooking lentils and veggies to make dahl.
It was a complete change, and that’s what I love about these boxes; you learn so much about food and recipe inspiration for the weeks ahead.
