One of my most popular blog posts are my previous What I Eat in A Day Posts but it’s been absolutely ages since I did my last one! So I decided to write another one especially since I’m in my 3rd trimester of pregnancy so what I can now eat has changed somewhat! I’ve also added the supplements I take as I often get asked this.

A little about my diet before we begin. I am gluten and dairy free but I do eat goat’s milk products occasionally. I do have additional requirements, also having IBD, for example, I struggle a lot with tons of raw foods like salad and do much better with cooked things! However, since being pregnant and starting Symprove, I have found I can tolerate a wider variety of foods and a little more fibre! Hurrah!

Before Breakfast: Symprove

I’ve done a full review of Symprove so won’t go on at length about it here, but most mornings I take 30-40ml of this before my breakfast. You have to take it on a completely empty stomach and then wait about ten minutes before you can eat or drink so I’ll take this as soon as I get up!

Breakfast: Gluten-Free, Vegan Overnight Oats

There are a few different things I like to have for breakfast but today was overnight oats as I was trying to make a conscious effort to eat a little bit healthier! I used a cup of gluten-free oats, and a tablespoon of chia seeds as the base; adding some chopped strawberries and a chopped banana as a filling. I then added almond milk to cover the mixture and a couple of tablespoons of dairy-free yoghurt (I used Alpro natural). I also added 2 tablespoons of peanut butter and mixed it really well.

Lunch

I’m a massive snacker but this breakfast actually managed to keep me full until lunch! I really should make it more often! For lunch, I made a dish that I’ve made literally millions of times before (a bit obsessed!) but I really enjoy it! It’s tuna and apple pasta with goat’s cheese.

It doesn’t look amazingly appetising I know but it’s so quick to make and take leftovers out too (I work from home but I’ve made it as a packed lunch plenty of times). The apple is good for getting a bit more of your 5 a day and the goat’s cheese is great for calcium.

This time it is a mix of gluten-free pasta (I used Waitrose corn and rice pasta but chickpea and buckwheat pasta are healthier options that work well), tuna and chopped and peeled apples. I then stir in two tablespoons of vegan mayo (I personally love the Hellman’s vegan mayo that I mentioned in my new gluten-free, vegan finds post) and sprinkle over some goat’s cheese. I will sometimes add some nutritional yeast to this too. I usually take my fish oil supplement with my lunch-I take Bare Biology’s Bump and Glory omega 3 capsules.

Dinner

I had the good sense to prepare a slow cooker dish today!. If you read my blog regularly, you’ll know how much I love my slow cooker dishes. This time I made a slow cooker curry with chicken thighs.

I used chicken stock and Bay’s Kitchen low FODMAP Jalfrezi curry sauce. as the base for this dish. I am not low FODMAP myself but do struggle to find natural, gluten and dairy free sauces so Bay’s Kitchen very kindly sent me some of their products to try. I was really impressed with the jalfrezi sauce and its natural ingredients (Tomatoes, Water, Mixed Peppers, Tomato Purée, Olive Oil, Maize Flour, Coriander, Chives, Turmeric, Cider Vinegar, Cumin, Sea Salt, Dextrose, Sugar, Paprika, Chilli Flakes, Black Pepper). I then added chicken thighs, chopped tomatoes, butternut squash and potato. My husband added onion which I hate but he still tries to sneak in!

We served this with rice and Co-op’s new gluten-free chicken pakoras which are my latest find! And kept plenty for the next day.

Snacks

I am the worst for snacking during the evening! I bought this Alpro yoghurt on the off chance during my Waitrose shop and it is really really yummy! It’s the first dairy-free greek style yoghurt I’ve tried and its really thick and creamy! 10/10!

Moo Chocolates also very kindly sent me some of their new chocolate range so I had a few squares (okay, almost the whole bar!) of the cinder toffee bar! That was pretty bloody delicious too!

Before bed, I had a chamomile tea, took my pregnancy supplement (I use Together Health’s one) and my medication. And that’s what I eat in a day!

  1. I’m going to try your tuna and apple pasta with goats cheese, I wouldn’t have thought of putting those ingredients together! It looks delicious.
