Delicious gluten and dairy free sausage slow cooker

I am pretty obsessed with my slow cooker at the moment to be honest. You might have enjoyed my turkey and sweet potato slow cooker stew recipe that I previously blogged about-but today, I wanted to share a new gluten-free slow cooker dish: my gluten-free sausage slow cooker stew.

This dish is super-easy to make; full of soluble fibre and uses chicken sausages as a healthier alternative to usual ones!

This recipe uses Heck Simply chicken sausages. (not an ad; I just really enjoy these-they’re less greasier and lower in fat than regular ones! For those on slimming world, they are 0.5 syns each (but I believe you can also get syn free sausages too!)

The potato, sweet potato and courgette are all great forms of soluble fibre: easy to digest fibre that gently helps both forms of IBS, loose stools and constipation (I’m mentioning this to explain this definitely won’t have a laxative effect! It is a gentle, gut-friendly form of fibre)

As usual, there’s plenty of anti-inflammatory spices-such as ginger and turmeric!

If you’re following the low FODMAP diet: the only switch you’ll need to make is omiting the garlic for infused oil or leaving it out altogether. This recipe can use any stock cubes or sausages: low FODMAP stock cubes are available here and the simply chicken Heck sausages I use are safe from my own research but obviously use the app too. As this dish serves four, thes safe quantities of sweet potato (1/2 cup, 75g) and courgette (65g) should fit with the quantities in the recipe but always alter for your own personal requirements.

GLUTEN AND DAIRY FREE SAUSAGE SLOW COOKER

This super easy slow cooker dish is gluten and dairy free.

Ingredients

  • 10 chicken sausages, (this is how many were in the pack-it can be done with less!)
  • 2 potatoes
  • 2 sweet potatoes (75g per person is low FODMAP friendly)
  • 1 courgette
  • 2 tbsp vegetable stock , (diluted with prescribed amount of water- I used 1.5 cups)- use low FODMAP stock cubes.
  • 1 tin of chopped tomatoes
  • 1 teaspoon of turmeric
  • 1 teaspoon of cinnamon
  • 1 small piece of ginger
  • 2 cloves of garlic (swap for garlic oil for those on the low FODMAP diet)
  • 1 teaspoon of paprika

Instructions

  1. In a frying pan, brown chicken sausages for 7-10 minutes. This is not essential but ensure the skin stays crispy-so once you have a nice brown skin; you're done! (they'll cook in the slow cooker further too)
  2. In the slow cooker, pour in chopped tomatoes and mixed veg stock (made with quantities directed as per the brand you are using) This is your base.
  3. Add chicken sausages to the slow cooker.
  4. Peel and slice sweet potato and potato. If you'd like your courgette cooked, peel and slice too. Chop into small pieces and add to the slow cooker mix.
  5. FInely chop ginger and garlic. Add to the mix.
  6. Sprinkle in the spices- turmeric, paprika and cinnamon.
  7. Stir well to ensure sausages and vegetables are coated completely, the spices are evenly distributed and everything is covered as much as possible by the liquid.
  8. Put on slow for 8 hours and then voila-a perfect sausage stew!
