Today’s post is about a company I have geniuninely fell in love with! There are a few recipe boxes out there designed for those who have dietary restrictions ( I’ll be blogging about most of these over the next few weeks) but Mindful Chef is the first aimed specifically at those who are eating clean, gluten free and dairy free( or even on Paleo)

The emphasis is very much healthy eating rather than ‘free from’ foods. The company offers you a choice of a classic meat based box or a plant based box (perfect for busy vegans) and also lets you make other adaptations: selecting 2 meals from a choice of 4-5 and also distinguishing between cooking for 1 or 2 people- perfect for making sure there’s absolutely no waste.

First up let’s look at my box. I received ingredients for 2 meals (not all the ingredients are pictured below) along with 2 beautifully presented recipe cards.

I was sent the ingredients for  Cajun chicken and lettuce tacos with carrot fries + Thai Pork Meatball Soup with Courgette Noodles. I absolutely loved how inventive the recipes were; it encouraged me to think outside my (rather restrictive at times) dietary box. Hee’s the chicken recipe once I’d cooked it.

I was really impressed with this recipe; I’d tried lettuce tacos before but they were quite plain and tasteless- the addition of Tahini and Cajun Powder jazzed these right up! If you think this looks a little plain, I  must admit I did omit several things on the recipe as I didn’t fancy the beetroot and avocado salad that went alongside it. That’s the beauty of these boxes: it gives you options to create new dishes and if there is something you dont fancy, you can always leave it out.

I would really recommend these boxes, it is so great that you don’t have to worry about it containing gluten or dairy since everything is gluten free and only a very small % of the recipes contain dairy. To avoid confusion, Mindful Chef lists all of next week’s recipes online with very clear allergy information.
