Vegan Chocolate Coconut Truffles (GF/DF)

Today I’m back with a new Valentine’s themed recipe-and a gorgeous gluten-free, dairy-free and sugar-free one the team at Splenda have shared with me!

If you’re anything like me, you might be slightly addicted to Booja Booja- the insanely good (but insanely expensive) vegan chocolate truffles. Well if your budget doesn’t quite stretch to that this Valentine’s Day and you’re still looking to gift your ‘free from’ companion someone special- then this recipe for your very own vegan chocolate coconut truffles is the perfect solution!

Vegan ChocolateCoconutTruffles

They look incredibly decadent, but they’re actually really easy to make (I promise!) and you will only need a handful of everyday ingredients to make them! You’ll just need to make sure you remember to find time to leave these in the fridge-as they do need a few hours to set.

Vegan Chocolate Coconut Truffles

A deliciously decadent truffle that's incredibly easy to make.

Ingredients

  • 3 tablespoons of sunflower oil
  • 3 tbsp of coconut milk
  • 55 g dairy-free chocolate
  • 5½ tbsp SPLENDA® Granulated
  • 140 g fine coconut

Instructions

  1. Melt oil, coconut milk and chocolate in a saucepan.
  2. Add the SPLENDA® Granulated and coconut.
  3. Roll into balls and leave to set in fridge.
  4. Cover with chocolate and set. Then refrigerate again until chocolate covering has set firm.
As always with the recipes I share on here, I’d encourage you to make your own adaptations. I imagine added dried fruit might not only boost the fibre content of these but offer additional sweetness. If coconut milk isn’t your thing, a creamy plant-based alternative like Hazlenut milk might work just as well instead.I’ll definitely be making these in batches and keeping for snacking-I’m envisioning adding a few teaspoons of nut butter for extra creaminess and perhaps stirring in some flaxseed to get a good hit of Omega 3s!

  1. Why don’t you just use sugar or honey. Splenda (sucralose) has been proven to be detrimental to good gut bacteria, disrupts insulin levels and possibly carcinogenic!!
    I thought this was meant to be a health blog…

      Hi Amy, this is a lovely recipe and I was more than happy to share it.I’m sorry if it has upset you but this is a blog chronicling different recipes and suggestions for a healthy lifestyle. Some of my readers are looking for gluten-free recipes and that’s what health means to them; others are looking to give up junk food-and therefore they might be looking for a healthier alternative to chocolate bars. No one recipe could ever disrupt gut bacteria or be carcinogenic! It’s absolutely fine if this recipe isn’t for you, but everyone is at different stages of their health journey and may find it useful.
