Gluten-Free, Vegan ‘Cheesy’ Loaded Nacho Bowl

Today I’m back with a new recipe! As mentioned last week, I have been working with Genius on their new range and after chatting to you about fibre and gut health last week, this week I’m sharing a brand new recipe: a gluten-free, vegan loaded nacho bowl; packed with veg, great for your gut and DELICIOUS!

Gluten-Free Vegan Loaded Nacho Bowl: Nutrition Notes

-I’ve made this recipe using Genius’ fibre fest beetroot wraps as a base. As I mentioned in my fibre post last week; these are a great source of soluble fibre-as they contain Psyllium Husk (a great all-rounder whether you suffer from loose stools or constipation) as well as prebiotic fibre chicory inulin.

-I’ve also used avocado which is a great source of healthy fats (especially important for vegans).

-You can really add anything to this dish. I added rice to add a little more carbohydrates and stodge, chopped tomatoes and vegan cheese for flavour.

-You could make it even more fibre rich by packing in the beans or lentils too! (I find these upset my stomach so I’ve stuck to my fail safes)

-A note on achieving the allusive dairy-free cheesy flavour! I have struggled with this in the past. You can use nutritional yeast and/or cashews like I used in my Gluten-free cheesy pasta bake. However, I stumbled across a free-from cheese sauce mix from Tesco and this worked so well! I melted a bit of extra DF cheese into it but I really don’t think I needed to! I used Violife’s cheddar block purely because that’s what was in my fridge!

I was so pleased at how this came out! The Genius fibre fest wraps, avocado and chopped tomato make it a really healthy alternative to some mexican food. The spices perfectly compliment the cheesy sauce and this is such an easy vegan dish to make! I’ll 100% make it again!

  1. Honestly, I need this in my belly right now. I have a huge thing about nachos, but I hardly ever have them unless out, this sounds like such a simple bowl to put together at home as well.

  2. This looks so good! We love nachos in our house but don’t often have them when guests come round because of dietary requirements. I will definitely be giving this recipe a go!

  3. will definitely be trying this next time I want my “cheese” fix! I love how good vegan cheese is getting (as it didn’t uses to be lol) 🙂
