Today I’m back with a hot chocolate recipe that’s ideal if you’ve got a few easter eggs that you fancy doing something different with. Lots of us with gut issues can struggle to eat lots of chocolate in one go, even if we opt for the dairy-free kind (for me, this is due to the high-fat content) so making a hot chocolate is a great way to get a chocolate fix and stop you eating all your eggs at once!

You can also add herbs and spices to this hot chocolate which might help with your digestion too to make it a superfood vegan mint hot chocolate that’s belly friendly!

I was challenged by Hotel Chocolat to make this recipe and they’re a brand whose easter eggs I get year on year (and always get gifted their chocolate for Christmas!). You might think they don’t offer dairy-free or vegan easter eggs but you’d be mistaken! Hotel Chocolat does quite a few different dairy-free easter eggs: and if you click the ‘suitable for vegans tag’ when on their website it will filter out only to show you the dairy-free options. They do traditional dark chocolate (like this gorgeous dark mint chocolate easter egg which I used to make my hot chocolate!) but they also do free from milk bunnies (note these are also free from gluten and nuts too-which can be tricky to find!). The quality of eggs means you only need a tiny bit of their chocolate to make a gorgeous hot chocolate that will satisfy the sweetest of taste buds.

Is this recipe low FODMAP?

Yes, depending on the easter egg you use. Looking at the ingredients of the Hotel Chocolat egg, it appears to be low fodmap and all the other ingredients: cinammon, almond milk and ground ginger are FODMAP friendly.

How to make my belly friendly vegan mint hot chocolate

To make my hot chocolate recipe, follow the recipe below. There are a few alterations you can make: like using mint extract if not using a mint easter egg. You can also add some turmeric if you’d like to make it a turmeric hot chocolate!! If you struggle to get ground ginger, I sometimes use Spice Pots sweet spice which has ground ginger, cinnamon, and a few other spices.

Vegan mint and cinnamon Hot Chocolate

Prep Time: 2 minutes
Cook Time: 2 minutes
Total Time: 4 minutes

This vegan cinnamon and mint hot chocolate is delicious and gentle on your gut.

Ingredients

  • 40g of dairy-free easter eggs (I used Hotel Chocolat's dark mint chocolate easter egg)
  • 220mls of almond milk
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of ground ginger (optional)
  • Optional: 1/4 teaspoon of turmeric
  • If not using a mint easter egg, use 1/4 teaspoon of mint extract

Instructions

  1. Break up dairy-free easter egg and melt in the pan for around 2 minutes until it starts to melt into a chocolate paste.
  2. Once it starts to soften (no need to wait until it's completely melted), add 220ml of almond milk and stir in the pan.
  3. A saucepan on a hob contains a creamy liquid with partially melted chocolate pieces floating on the surface. Steam is rising from the mixture.
  4. Add ginger, cinnamon, and turmeric/mint extract if using.
  5. Stir well for 2 minutes until hot and well mixed.
  6. Turn off heat and pour into mug.
