My Thai recipes (such as my yummy gluten and dairy-free pad thai!) are some of the most popular on my blog so today I’m back with another: a gluten and dairy free Thai green curry recipe that’s great for your gut and a much healthier alternative than your takeaway!

A quick disclaimer before we begin. This is a paid collaboration with Hello Fresh who have asked me to share their gluten-free thai green curry recipe and how I’d adapt it to make it belly-friendly for me!

About the gluten and dairy free Thai green curry

-The base is chicken stock (upgrade to bone broth for extra gut health points) and coconut milk. If you’re sensitive to fats, consider using a light coconut milk-or, like I often do, substitute 50/50 coconut milk and almond milk (the result is a less creamy but lower fat curry)

-I’ve kept them in the recipe but I personally omit the pepper and chilli. These contain capscium which can irritate the gut if in large quantities.

-It uses fish sauce which is great to have in your cupboard as a gluten-free alternative to soya sauce!

-Chicken thighs are a great source of protein and healthy fat. Although you could substitute for tofu or leaner chicken breast if you prefer.
