Gluten and dairy-free slow cooker butter chicken (low-fodmap friendly)

Today, I’m back with another slow cooker recipe which is gluten-free, dairy-free butter chicken that also makes a great low FODMAP slow cooker recipe.

Unlike the dairy-packed regular butter chicken, this super and delicious dish uses coconut milk instead of traditional dairy and can be easily adapted to make it a suitable low fodmap slow cooker dish (just read the nutrition notes to find out how!).

What’s more, it takes hardly any time to prep as your slow cooker does all the work!

Once cooked, this butter chicken recipe is delicious and really similar to the original butter chicken.

And, if you’re into meal prepping, you’ll be pleased to know it can freeze well too and lasts for a couple of days in the refrigerator.

Gluten and Dairy Free Butter Chicken-Some Nutrition Notes

Curry powder can have a lot of different ingredients and vary a lot from brand to brand but most are gluten and dairy-free. You can buy just a curry mix or use the suggested mix I’ve included in the recipe.

-There are lots of options for stock. You could use bone broth or just regular stock cubes (Kalloo and Knorr are great for gluten-free stock cubes here in the UK).

-If you’re on the low fodmap diet, you can also buy some low fodmap stock cubes here (use BALANCED5 for 5% off)

-I advise using the creamy coconut milk that comes in a can if you want a sauce that’s more velvety and thick (like the photo).

This recipe uses 1 cup of coconut milk and should serve 4 people.

1/2 cup of coconut milk is fodmap safe (and as this serves four that’s plenty) but if you wish, you may wish to use a little less and add safe dairy-free milk for you. This is also a good idea if you struggle to tolerate a lot of fats.

-You can choose to use coconut oil, ghee or garlic-infused oil for the healthy fat portion of this dish.

-Finally, some people with digestion problems might find tinned tomatoes problematic. 92g (or 3/5 of a cup) of tinned tomatoes are low FODMAP friendly. As this recipe serves 4 it is again FODMAP safe but you can easily reduce the tinned tomatoes by half if needed and replace them with extra stock.

Gluten and Dairy Free Low FODMAP Butter Chicken

Prep Time: 30 minutes
Cook Time: 4 hours 40 minutes
Total Time: 5 hours 10 minutes

This deliciously creamy but super simple gluten and dairy-free butter chicken is so easy to make in the slow cooker and is low FODMAP friendly too.

Ingredients

  • 500g chicken breasts, diced
  • 1 Tbsp coconut oil or ghee, melted.( Garlic infused olive oil it's also a great low fodmap alternative if you want to kick it up a notch)
  • 1/2 Tsp ground ginger
  • 1/2 Tsp ground turmeric
  • 1/2 Tsp ground paprika
  • 1/4 Tsp ground coriander
  • 1/4 Tsp ground mustard
  • Pinch of cinnamon
  • Pinch of nutmeg
  • 1 Cup/ around 230mls diced canned tomatoes (See notes above for LOW FODMAP adaptation)
  • 1/2 Cup/ around 115 ml water or stock
  • 1 Cup /around 230mls coconut milk (see notes above for LOW FODMAP adaptation)

Instructions

    In a bowl combine chicken, coconut oil and spices

    Let it marinate for 20 minutes.
    Transfer to a slow cooker.

    Add canned tomatoes and water or stock and cook for 4 hours or until the chicken is done.
    Mix in coconut milk and cook for 10 more minutes.

        I followed your recipe exactly using my Pampered Chef Quick Cooker on Slow Cook. Mine came out more like a broth and the chicken was very dry. Any idea what I did wrong?

    Looks like a great recipe (and my first attempt is in the slow cooker now) but I’m just a little confused by these quantities:-

    1 Cup/ 128g diced canned tomatoes (See notes above for LOW FODMAP adaptation)
    1/2 Cup/ around 230mls water or stock

    Is it possible these are the wrong way around (ie should it be 1/2 cup of canned tomatoes and 1 cup of water or stock)?

      sorry about this-the cups were right it was just the mls the wrong way around, so it is 1 cup of tomatoes and 1/2 cup of water-I’ve swapped the measurements around so it now reads correctly!

    Pretty good… almost there for me. It had a bit of an acidic quality for my pallet.
    Testing GF/DF recipes for a upcoming dinner with friends on dietary restrictions. I had to add salt and blue agave syrup for a more full bodied, balanced flavor. I’ll have to ask if they are sodium and glycemic index conscious.

      I am terrible at freezing things to be honest, we just keep it in the fridge for a day or two-but I don’t see why not!

    I have a son with celiac disease and IBS so thought i would try and add this to the list of teas, i made it all put it in the slow cooker on high and well…either my slow cooker is to big for 4 people or there is not enough liquids as it all shrank at the bottom and stuck! Help

    This did not work for me at all. It didn’t smell or taste like butter chicken and it was very watery. I followed the recipe exactly, but it didn’t work out. Will not be making it again.

    Did NOT turn out well. Would love some advice.

    It was basically soup. VERY watery, even after adding the coconut milk. I even tried pulling out about a cup of the liquid and seeing if it would thicken if I added corn starch to it. It didn’t work.

    I had tripled the recipe, thinking that 500g of chicken wouldn’t be enough for me and my husband to have leftovers. But I was careful to triple everything in the recipe. I also probably overcooked it a little since the chicken seemed a little dry.

    The flavor wasn’t bad (my husband thought it was bland, but he’s not the one with stomach problems so he can handle more of a kick than me). Would love to try again if I can get the sauce to thicken beyond a broth.

      Hi, I had the same result? I was thinking maybe the diced tomatoes need to be strained? I cut the water added in half but I still made soup. I also realized I wasn’t mixing up the coconut milk that had separated so could that be it? It’s still really good, but it’s… a soup that I keep making LOL

    I enjoyed this recipe but mine was also watery. I strained the tomatoes and next time I would leave the stock out. I wish the spices were a bit stronger. Thank you for the low fodmap recipe, I’m about a week in and not enjoying it 🙁 lol.

    I love this recipe and how easy it is! The sauce is a bit watery, but that doesn’t really bother me and I’ve had plenty of curries with a similar broth consistency. I always use broth instead of water, but that’s jus y own cooking preference. For the Americans out there, I use an instant pot and generally end up on medium slow cook setting for 6 hours. I also add salt and pepper to the spice mix marinade, I can imagine this would be pretty bland without it and I always salt my chicken.

    This tasted different than I expected but I can see why it’s called butter chicken now :). It was yummy and nice for a wintry day. Plus crockpot meals are my favorite for how easy they are.
