So today I’m back with another recipe! This is something I’ve wanted to make for absolutely ages! There have been a few gluten-free versions on the market, but I also avoid milk and egg so they were a no go! But I’ve finally mastered it:gluten free chicken kiev!
As you might know from my newly diagnosed with Coeliac Disease post, I am a Genius ambassador and one of my projects have been to come up with some yummy free from recipes using their products. I came up with this easy to cook, gluten and dairy free chicken Kiev by using their soft white farmhouse loaf. As it’s dairy free, I used a combination of dairy free spread, garlic, lemon and chives to create the ‘buttery’ filling. I’m excited it actually held and that the butter came oozing out when I cut into it! Here’s the recipe…
gluten and dairy free chicken kiev
- -2 chicken breasts
- -4 tablespoons of dairy free spread
- -2 slices of Genius Gluten Free Farmhouse White Loaf
- -2 eggs
- -4 cloves of garlic pressed
- -A handful of chives chopped into small pieces
- -Dried parsley
- -1 lemon
Grate the rind of the lemon.
Mix the butter, pressed garlic, chopped chives, dried parsley and lemon. Mash until well mixed.
Roll your butter mix into two thin 'sausage like' shapes.
Wrap these in cling film and store in the freezer until almost frozen (took us about 15-20 mins)
Now blend your farmhouse loaf slices into breadcrumbs. Place breadcrumbs in a separate bowl.
Slice chicken breasts vertically to form a pocket.
Once your butter mix is done, use a spoon to place the frozen butter inside.
Mix eggs in a small bowl to create an egg wash.
Cover chicken breasts in the egg wash and then coat in the breadcrumbs.
If there’s gaps, brush extra egg wash on to the chicken and sprinkle with breadcrumbs.
9. Heat in the oven until golden brown (approximately 30 minutes on 220 degrees)

Total fat per serving (without side dish) 16.6g (This varies depending on the dairy free spread you use as some are higher in fat than others)
